Savory Grilled Potatoes

List of ingredients:

1/2 cup of mayonnaise.
3 cloves garlic.
1/2 teaspoon of paprika.
1/4 teaspoon of salt.
1/4 teaspoon of pepper.
3 baking potatoes, cut in quarter-inch slices.
1 large onion, sliced.

Method:

In a large bowl, mix the mayonnaise and seasons until well blended.

Stir in the sliced potatoes and onions to coat.

Divide the potato mixture evenly among six 12-inch square pieces of heavy duty foil.

Seal each piece to form a packet.

Place the foil packets on your grill over medium-high heat.

Grill, covered, for 25-30 minutes or until the potatoes are tender.

Easy Recipe for Blueberry Pie

List of ingredients:

One 9-inch double pie pastry.
4 cups of fresh blueberries.
1 cup of sugar.
3 tablespoons of flour.
1/2 teaspoon of grated lemon peel.
Dash of salt.
1/2 teaspoon of cinnamon.
1/2 teaspoon of nutmeg.
1 1/2 teaspoons of lemon juice.
1 tablespoon of butter.

Method:

Line a pie plate with the pastry.

Combine the fresh blueberries, sugar, flour, grated lemon peel, salt, cinnamon and nutmeg. Fill pie shell.

Sprinkle with the lemon juice.

Dot with the butter.

Adjust top crust.

Bake at 400F for 35-40 minutes.

Serve warm.

Prawn Curry

List of prawn curry ingredients:

2 lb of medium fresh prawns.
1/2 lb of onions, sliced.
1 cup of oil.
3 teaspoons of garlic and ginger ground together.
2 teaspoons of white cumin seeds.
3 teaspoons of red chilli powder.
2 teaspoons of salt.
1 teaspoon of turmeric.
1 coconut (grated and milk kept).

Instructions:

Wash the prawns and rub in the salt and turmeric.

Heat the oil in a pan, add the sliced onion and fry until just softened. Add all the other spices and fry for 2-3 minutes.

Add the prawns to the pan and mix together with the spices. Add the grated coconut and squeezed out coconut milk.

Cover and cook over low until prawns are tender and a very thick sauce remains.

Recipe for Tangerine Duck

List of ingredients required:

1 duck, about 4-5 lb.
3 tangerines (2 peeled, peels reserved, 1 unpeeled).
2 tablespoons of sugar.
1/4 cup of onion, chopped.
1/4 cup of celery, chopped.
2 bay leaves.
Salt and freshly-ground black pepper, to taste.

Method:

The day before, clean the duck, remove the excess visible fat, and refrigerate, uncovered overnight.

Preheat your oven to 475F.

Remove the duck from your refrigerator, then prick the skin all over using a fork, without piercing the meat.

In a suitably sized bowl, combine the 2 peeled tangerines with the sugar, and mash them using a fork until the sugar is well mixed.

Lift the skin of the duck away from the breast meat, and pack the pulp under each breast.

Cut the single tangerine in half, and rub the skin of the duck all over with the cut sides of the fruit.

Squeeze out the remaining juices from the tangerine halves, add to the tangerine and sugar mash and stuff the tangerine halves into the duck cavity.

Pour the remaining tangerine and sugar mixture into and over the duck.

Stuff the duck cavity with the chopped onions, chopped celery, and bay leaves.

Sprinkle the salt and pepper over the duck and inside the cavity of the duck, rub well into the skin.

Place the duck in a roasting pan with a rack, and sprinkle the tangerine peel around the duck.

Roast the duck for 20 minutes, then reduce heat to 350F and roast for 35 minutes.

Turn the temperature up to 475F and roast until very dark and crisp (about 20 minutes).

Oriental Barbecue-Style Ribs

Here is a great oven recipe for Chinese pork ribs:

List of ingredients:

5 lb of pork spare ribs.
1 1/2 teaspoons of salt.
1 beef bouillon cube.
3/4 cup of water, boiling.
1 teaspoon of cooking oil.
1 can of pineapple, crushed, undrained.
1/4 cup of dark brown sugar, firmly packed.
1 teaspoon of onion powder.
1/4 teaspoon of garlic powder.
2 tablespoons of Worcestershire sauce.
2 tablespoons of cornstarch.
1/4 cup of water, cold.

Directions:

Cut the pork ribs to form individual portions, then sprinkle with 1 teaspoon of salt.

Place the ribs on a rack in a shallow baking pan and bake in preheated 375F oven for 1 hour 45 minutes or until almost tender. Drain off fat.

While the ribs are in the oven, dissolve the beef bouillon cube in boiling water in a medium-size saucepan.

Add the cooking oil, pineapple, brown sugar, onion powder, garlic powder, Worcestershire sauce and remaining salt, then bring to a boil.

Reduce heat and simmer, uncovered, for 5 minutes.

In a small bowl, combine the cornstarch with the cold water, then stir into the sauce mixture. Cook and stir until thickened.

Spoon sauce over drained, baked ribs.

Increase oven temperature to 425F. Bake for 30 minutes or until glazed nicely.

Baked Broccoli Frittata

List of ingredients:

1 cup of sliced onions.
1/2 cup of sliced green bell pepper.
1 clove garlic, minced.
2 tablespoons of butter.
6 medium eggs.
1/3 cup of half and half.
1/2 teaspoon of basil.
1/2 teaspoon of lemon pepper seasoning.
1 cup of frozen broccoli, cooked, drained.
1 cup of shredded Monterey Jack cheese.
1/3 cup of grated Parmesan cheese.

Method:

Preheat your oven to 425F.

Generously butter a 2 quart shallow casserole or 4 individual baking dishes.

In a large skillet over medium-low heat, sauté the sliced onions, bell pepper and garlic in the butter until tender; cook slightly.

In a large bowl, beat the eggs, half and half, basil and lemon pepper seasoning until combined.

Stir in the onion-pepper mixture and broccoli.

Pour into prepared casserole.

Sprinkle with the shredded Monterey Jack and grated Parmesan.

Bake for 20 minutes or until mixture is set (top will remain moist).

Allow to stand for 5 minutes before serving.

Asian Stir-Fried Beef and Bitter Melon

List of ingredients needed:

1 tablespoon of fermented black beans.
1 lb of bitter melon.
1/2 lb of lean beef.
2 teaspoons of cornstarch.
2 teaspoons of soy sauce.
1/4 teaspoon of salt.
Pinch of sugar.
2 tablespoons of water.
1 tablespoon of cornstarch.
1 clove garlic.
1 1/2 tablespoon of cooking oil.
1/4 teaspoon of salt.
1 1/2 tablespoon of cooking oil.
1/2 cup of stock.

Cookery method:

Soak the fermented black beans.

Slice the bitter melon in half lengthwise. Scoop out the seeds; then cut into quarter-inch slices. Parboil 2 to 3 minutes.

Thinly slice the beef against the grain. Combine the 2 teaspoons of cornstarch, soy sauce, salt and sugar. Add to beef and toss to coat.

Blend the water and the 1 tablespoon of cornstarch to a paste. Drain the soaked black beans. Mince the garlic and mash with the beans.

Heat 1 1/2 tablespoons of cooking oil. Add the remaining salt, then beef. Stir-fry for 2 minutes or until the beef loses its redness. Remove from pan.

Heat the remaining 1 1/2 tablespoons of oil. Add the black bean mixture and stir-fry a few times. Add the bitter melon and stir-fry for about 1 minute to heat and coat with oil.

Stir in the stock and heat quickly. Cook, covered, for 2 minutes, over medium heat.

Return beef and stir-fry gently to reheat and blend flavors. Stir in the cornstarch paste to thicken.

Serve immediately.

Shrimp and Nori Rolls

List of ingredients for Shrimp and Nori Rolls:

1 cup of shrimp.
1 tablespoon of mayonnaise.
1 green onion, thinly sliced.
2 sheets of nori.
¼ English cucumber, seeded, julienned.
1 tablespoon of toasted sesame seeds.

Method for making:

Drain the shrimp and combine with the mayonnaise and sliced green onion.

Lay out one sheet of nori lengthwise on a flat surface.

Place half of the shrimp mixture one inch from the edge.

Lay half the cucumber evenly beside the shrimp.

Sprinkle with half the sesame seeds.

Roll up tightly.

Repeat with the other half of the ingredients.

Cut each roll into 6 pieces.

Yummy Banana Donuts

List of ingredients:

4 cups of all-purpose flour.
1 cup of granulated sugar.
1 cup of mashed bananas.
1/2 cup of buttermilk.
1/4 cup of shortening.
2 medium eggs.
4 teaspoons of baking powder.
1 ½ teaspoons of vanilla extract.
1 teaspoon of baking soda.
1 teaspoon of nutmeg.
½ teaspoon of salt.

Instructions:

Cream shortening and sugar together.

Add eggs to the mixture and beat well.

Mix the bananas, vanilla extract and buttermilk.

Add this to the creamed mixture along with other dry ingredients.

Roll mixture out onto a lightly floured surface.

Cut and leave to stand for 15 minutes.

Deep fry until golden brown.

Recipe for Spanish Omelette

Here is a really interesting option if you have a lot of eggs:

Ingredient list

1 1/2 cups of sliced potatoes.
1/2 cup of chopped onion.
1/2 cup of chopped red bell pepper.
1 garlic clove, minced.
1/4 cup of green olives, pitted and chopped.
1 tablespoon of minced fresh oregano.
1/2 cup of non-fat mozzarella cheese, shredded.
8 large egg whites.
4 large eggs.
Pinch of salt.
Pinch of pepper.
1/2 teaspoon of olive oil, divided.
Vegetable cooking spray.

Method:

Place the sliced potato in a saucepan and cover with water.

Bring to a boil, then reduce heat.

Simmer for fifteen minutes or until tender; then drain. Cool, dice and set aside.

Heat a medium non-stick skillet over medium heat.

Add the chopped onion, bell pepper, and minced garlic; then saute for eight minutes.

Add the potato, olives, and oregano; then cook for one minute or until thoroughly heated.

Remove from heat, stir in the cheese and set aside.

In a bowl, combine the egg whites, eggs, salt, and pepper; stir well with a whisk.

In a small non-stick skillet coated with cooking spray, heat 1/4 teaspoon of oil over medium-high heat. Add half of egg mixture to skillet.

Using a spatula, lift the edges of the omelette; allow uncooked portion to flow underneath cooked portion.

Cook for three minutes, then flip the omelette.

Spoon one cup of potato mixture onto half of the omelette.

Loosen with a spatula and fold in half.

Cook an additional minute on each side.

Slide onto a plate.

Repeat this procedure with the other half of ingredients.
